All of these shells have a slit in the back meaning the meat has been harvested and the shell is sold for profit by the Bahamian people. The edge of the shell is grinded down to prevent sharp edges. I try to pick the most natural looking shells with the best pink color. The outers of these shells are not perfect, it’s all about the gorgeous pink interior of the shell.
